The Food:
Soprosata
Soprosata is a dry salami, which is cured meat like
pepperoni. Calabrese soprosata (hot) is shown above). To make
it at home is not so easy, rather, it takes a lot of patience. IF ANYONE
has the correct, detailed directions, please email me, but basically you
get 12 pounds of pork, dice it, put it in a big stainless steel bowl. Add
in a cup of salt, a half cup of red pepper flakes, a cup of red wine. Put
it through the grinder, stuff into the casing, then hang to cure.
