Regional Cooking of Emilia Romano, Italy

Emilia Romano is one of the the northern most regions of Italy.  It borders Tusdany, and is almost a dividing line when it comes to Italian cuisine.  Here you will find butter used more often than olive oil, like you would in Tuscany and all points south of this region.  North of Emilia Romano, butter is used as the lipid of choice, and south of this region olive oil is the dominating fat for cooking.  Within Emilia Romano, the city of Bologna resides, and this is the home of Tortellini.
